Let’s face it, food products that are flavored with another food never taste the same. Artificial flavors are created by a flavor chemist and involve hundreds of ingredients. In the case of banana flavored candies, many of us would agree that they definitely do not taste like the bananas we know and love.

That’s because we no longer eat the bananas they are flavored after. In North America, we eat mainly Cavendish bananas, but this was not always the case. The Gros Michel was the banana of choice until the Fusarium oxysporum fungus nearly wiped it out in the 20th century. The Cavendish took over, but the flavor in banana candies remain modeled after a much sweeter banana.
